Vigneron d'un Jour : Atelier Maturation - Champagne Lamiable
Why go there?
While waiting for the harvest, experience the maturity of the grapes.
Each year, before the harvest, the Champagne winegrowers monitor the maturity of their grapes to determine the optimal harvest date. Put yourself in the shoes of a Champagne winemaker. Accompanied by your host, go to the vineyards of Tours sur Marne to collect a sample of grapes (about 10 bunches per group). Back on the farm, as a group, press your bunches and measure the sugar and acidity of the grape juice. Visit the cellars of the house, then over a glass of champagne, try to determine the optimal harvest date.
After a short tour in the vineyard to pick up some grapes, you will observe the grapes, press the bunches and measure the probable alcohol content and acidity of the grape juice. You will have the opportunity to visit the Champagne cellars before tasting a flute of champagne.
