Reims has a real ham tradition. One must go back to the Paris World’s Fair of the mid-19th century, and to Curmer’s ‘Guide des Consommateurs’ of 1855, to find its origins.
Jambon de Reims is cooked in stock, seasoned, then coated in yellow breadcrumbs. But the recipe remains a secret.
