A real institution for the village of Épine, a few kilometres from Châlons-en-Champagne, the Hôtel Aux Armes de Champagne has a new lease of life after a successful renovation. Renamed Cuvée 31, the hotel’s historic restaurant is again offering gastronomic cuisine, under the leadership of Chef Jérémie Thébaut.
Before enjoying the elegant and subdued setting of one of the restaurant's two rooms, you’ll have the pleasure of sipping your aperitif at the bar or in a private lounge. There’s only one motto here: take your time and enjoy!
One main ingredient takes pride of place for each à la carte dish, like the Champenois Pork, with sweet potatoes, golden chanterelles, Cévennes onions in Tête de Chou beer and rosemary juices. It will really awaken your taste buds!
